I am so happy Friday is almost here, it’s still too busy at work. But I had a great hill/tempo run at the gym after to blow off some steam. And Miko is doing much better thankfully! I’ve been adding cooked brown rice to their dinners this week and he’s been enjoying making a mess with it and his V-Dog kibble.
So innocent!
He usually goes back and eats his mess later in the evening for a bed time snack.
I had fun with tahini for this summery savory zucchini based dressing. It has raw garlic, tangy lemon juice, is savory, and nicely creamy without added oil.
Tahini Miso Dressing
- ¼ cup tahini
- 1 small zucchini, chopped
- 1 tbsp. miso paste
- 2 tbsp. lemon juice
- 1-2 cloves of raw garlic
- Dash of red pepper flakes
- ¼ cup water, as needed
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy! Makes 2-4 servings.
This dressing is a great way to use up summer zucchini and has a festive, bright green color.
I coated a hearty meal salad with pinto beans and plenty of greens.
It added a tangy, savory flavor without being too heavy allowing the colorful veggies to shine too.
And I left the table satisfied after this huge salad!
I’m enjoying celebrating the last days of summer with these vibrant salads, especially since temps are starting to cool and perfect fall running weather is getting closer!
