Happy virtual Friday to me because I am taking tomorrow off! Okay, mainly to get adult stuff done before the holiday weekend running errands, having car maintenance done, and taking this sweet girl to the vet.
She needs another teeth cleaning and I hope that’s still an option at her age of 13 and for some tests to see if cataract surgery is an option for her too. Hope it goes well!
Our weather has been odd here, the 90s over the weekend and now back into the 70s with a chilly wind. But I’m still in the summer mood, cool and hydrating meal salads with bright flavors and colors are summer. This Dijon dressing is perfect for a summer salad or dip with a light texture and playfully kicky and sweet flavors. Light because hemp seeds are blended with carrot and raisins for decadent sweet and spicy party without oil or sugar. And it’s a great recipe to enjoy raw garlic.
Summer Dijon Dressing
- 3 tbsp. Dijon mustard
- 3 tbsp. apple cider vinegar
- 1 tbsp. miso paste
- handful of raisins
- 1 carrot, rough chopped
- 1 clove of garlic
- ¼ cup shelled hemp seeds
- ½ cup water, as needed
- salt and pepper to taste
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Coat a salad with it or use it as a dip and enjoy! Makes 4 servings.

It lightly coats with powerful flavor.
I added chickpeas to this salad for a filling meal and the kicky Dijon and garlic worked great with them.
