Winter Blues Dressing

It’s been raining just a bit here, pretty much non-stop since Monday and we’re starting to see flooding in Northern California now. Thankfully not by us yet, but poor Miko has been very frustrated with the weather. We got a brief break in the rain this afternoon, hubby tried to get him out for a walk when it started up again.

Poor guy just wanted to get back inside. Hopefully we get a little break tomorrow and Friday before it rains more on the weekend and can get him out for longer walks.

Lots of rain means treadmill runs for me at the gym.

And trying to eat healthy while comfort food has been temping in the chilly weather. The soybean spaghetti miso soup with veggies was very comforting and filling. So was the marinara tofu saute with Brussels sprouts.

And a simple tofu stir fry last night and salad with steamed artichoke for lunch today.

This time of year seems to bring a lot of colds and illness, lots of people coughing, sounding like heck, and/or calling in sick at work. We need to bring out the big guns to stay healthy which for me means kale, beans, raw garlic, ginger, turmeric, and lemon juice. This salad has it all! I threw this dressing together, but it’s the perfect recipe for the winter blues.

Winter Blues Dressing

  • 2 cloves of garlic
  • juice of one lemon
  • 1 tbsp. miso paste
  • 1 tsp. turmeric powder
  • 1” chunk of fresh ginger
  • ¼ cup hemp seeds
  • 2 tbsp. nutritional yeast
  • ¼ cup water as needed

Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy! Makes 4 servings.

Perfect warming color for winter and works so well with massaged kale.

Oh goodness, and it coats so well for a creamy and comforting salad.

Enjoy a hearty, comforting, and warming winter salad with this dressing.

Hubby made his own comfort meal that looked like a work of art with Gardein Turk’y Cutlets served over air-fried hash browns and Brussels sprouts.

And gave the cutlets a thumbs up with the provided vegan gravy.

    The rain is definitely a bummer, but this has got to be winter’s last hurrah, right? At least that’s what I’m telling myself… The official start of spring is just a few weeks away! It’s a brand new month tomorrow! And, until then, this dressing sounds delicious. :)

      Yes, but at least it’s not as cold as the last round of storms. Very true on spring, starting to see hints it’s near here and I’m looking forward to it!

    Sorry it’s flooding in your area. We have about an inch of ice over the snow in our backyard and it’s scary taking the dogs out to go to the bathroom. We’re all slipping around like crazy. Spring can’t come soon enough!

      Thanks, it’s been such an odd year, or few years, for the weather here. And sorry about the snow and ice, ugh! Hoping you start seeing spring soon!

    Love the title of your dressing. You have rain and we have snow. But it’s super duper cold here and I’m not sure how much more I can take! The air-fried hash browns and Brussel sprouts look amazing! My hubby wants to buy an air-fryer so badly! So far, I’ve kind of turned him down because I’m afraid it’ll just turn into another appliance I don’t use. But you have me halfway convinced now….

      Ugh, so sorry about the snow and cold. There is lots of that in the Tahoe mountains here too – much higher snow pack that I’m happily avoiding until the weather calms down. I can see that on the air fryer, but my husband in really loving it for fast cooking frozen foods and veggies and I like being able to cook foods fast without using the oven or oil.
