Avocado Parsley Dressing

The rain is back this week which is a good thing, except when unhappy chihuahuas refuse to go outside. Oh the angry stares I got this morning through the patio screen.

I get it, the weather was crazy today – heavy rain, strong winds, and even thunder and lightening which catches us by surprise here since that rarely happens.  Me making a new avocado dressing is not rare since cheap avocado season is nearing and such a happy time. I got more in our farm box with a beautiful batch of fresh parsley that inspired this dressing. It’s tangy and bright with a fresh herb flavor that channels sunny weather, but a creamy and rich comforting texture.

Avocado Parsley Dressing

  • 1 small/medium avocado, seeded and scooped
  • 1 clove of garlic
  • 3 tbsp. apple cider vinegar
  • ½ cup fresh chopped parsley
  • 2 tbsp. miso paste
  • ½ cup water, as needed
  • pepper to taste

Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy, makes 4 servings.

I threw everything into this meal salad, chickpeas, olives, and even chopped apple which all worked well with this vibrant dressing.

It’s like sunny and warm weather for dinner.

And celebrates fresh parsley complimented with tangy garlic.

It’s never too early to start celebrating warmer weather with a vibrant salad.

    I personally LOVE parsley, it goes well with a lot of dish as a spice. Combine with the creaminess of avocado, I could only imagine how delicious this sauce can be eaten with salads. Yum!

    Aw, the poor babies! At least the rain shouldn’t be as dire this time around. I think we might already be through the worst of it.

      I know and thankfully we’re getting a break from the rain tomorrow, but it’s in the forecast for the weekend again – oh well!

    I have all these ingredients in my house right now to make this!! Yay. And I always underestimate just how good parsley is for you!!! Just read in the paper today that we all need 10 servings a day of veggies. That’s alot. A nutritionist came to hubby’s school and we learned about just how good avocados are for you. Super good. Loaded in those good fats. Ick with the rain though. We’re finally getting a new cat this weekend, a stray that came to my mom’s house in the country – but exciting for us!!

      Awesome and so true, I’m surprised at the nutritional value a lot of herbs have. I read the 10 servings too and it’s a lot, but challenge accepted! :-) How exciting about the cat, can’t wait to hear more!

    I had to break down and buy an Avocado! They are currently $1.29 each at Aldi. Other shops are selling them for $2 to $3 each…sigh…

    PLEASE ship some to me! LOL
