Savory Pumpkin Dressing

I’m feeling better now that the weekend is closer and things are settling down a bit. We’re back down to two dogs, Dasher went back home this morning. But we played another game of hide-from-the-camera last night.

He is very camera shy and gets nervous just seeing the camera in my hand. Except when he’s eating, then he doesn’t notice the camera at all.

And he adapted nicely to V-Dog vegan dog food and chickpeas over the 4 days he stayed with us, he even begged for chickpeas! I need to try mixing in pumpkin next!

I also had a dressing win this week successfully creating a warm and comforting pumpkin salad dressing. It’s creamy, gingery, and has a tangy zing with a simple list of ingredients.

Savory Pumpkin Dressing

  • 1 cup pumpkin puree
  • ½” thick chunk of fresh ginger
  • 1 clove of garlic
  • 1 tbsp. miso paste
  • 2 tbsp. tahini
  • 2 tbsp. nutritional yeast
  • ½ cup water, as needed
  • Salt and pepper to taste

Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy! Makes 2-4 servings.

It’s thick and hearty, so hearty it practically needs to be worked into the salad which is not a bad thing!

It has a creamy and rich texture with a tangy, ginger flavor and just the right amount of savory.

    I would imagine this pumpkin salad dressing would be so tasty with many types of salads! And I wondered if you fed your dogs vegan food and how that worked!!

      Thanks, it could also be a thick dip. As you can tell from that pic, sweet Dasher could use more vegetables about whole foods in his diet instead of the snacks he gets with my mom, lol.

    For all the ways that people are obsessing over pumpkin, I’ve never seen it used in a salad dressing before! Innovative and delicious- I can’t wait to try it. I even have an open can of pumpkin waiting to be used, so your timing is perfect.

      It’s such a great base for salad dressing and blends perfectly with ginger – yum! I gotta try in in dog food next.

    I really wish I could find a vegan dog food that my picky eaters like. I’ve tried everything, even the canned formula that’s easier on my old pup’s teeth. They wouldn’t get near it. After trying to mix it in their normal food for a week I gave up because they weren’t eating. They didn’t starve because I fed them one meal a day without the mix of vegan, but they revolted when I’d mix it in. Even the kibble! How did you get your dogs to switch?

      It’s not easy with small dogs, it’s been lots of years of experimenting with whole plant foods they like and are good for them. I started by mixing the V-Dog kibble with a little canned food and warm water to soften it up and started mixing in other ingredients such as cooked lentils and chickpeas to expose them to other plant foods gradually. A lot of foods they did not like before they love now like watermelon, broccoli, and cauliflower. Now I need to work on my mom’s dog to get him to eat more healthier foods!
