Ah, I’m a little sad the long weekend is over. Especially since work has been so frustratingly busy the last few weeks. But back to it and being inside air conditioning is not a bad thing since we’re getting triple digit heat this week already! We usually do not see temps like this until late June, a little scary. Tomatoes are thriving in our AeroGarden, from seed to this after just 55 days!

I tried to get a decent ab workout in our home gym yesterday, but Leela had other plans climbing on me and doing her mercat pose to tell me it was walk time.

Sunday hubby and I braved Costco to stock up for the family Memorial Day party, thankfully they had plenty of huge watermelons which for me is the official food of summer.

I could have easily bought four, they were such a good price.

And went perfectly with my curry coconut tofu veggie stir fry for dinner.

And our family gathering for Memorial Day was a lot of fun at my sister’s house with plenty of vegan options that include corn, corn, and more corn!

I put raw corn in the huge kale salad I bought, vegan polenta was served, and grilled corn on the cob. It was all good with me, corn might be the other official ingredient of summer! The chopped Amy’s Organic Bistro vegan burger on the salad was pretty great too thanks to my sister, and the Organicville vegan Sun Dried Tomato & Garlic dressing for the salad.

    Hahaha! My dogs do that too me too. It’s always an adventure trying to get through a yoga session. :) All of those dishes look delicious. You ate well last weekend.

      Oh goodness, I almost want to lock them out of the gym, but then I feel guilty. :-) Thanks on the eats, the rest of this week will be pretty simple with work and dental work – ugh!

    I was just given a tomato plant! How often should I be watering it?

      How fun! Tomatoes can be picky about water and root rot, it depends on the size of the plant. Here’s more info:

    Nice melons. ;) It really isn’t summer without them! I could eat half a watermelon a day throughout the whole season only I had the space to store them all!
