It’s been a wild long weekend with lots of storms. It’s good, we always need the rain. But we’ve been spending more time at home because I’m not a fan of going out in sideways rain and wind. Thankfully we have not lost power in these storms, yet.
We did get out to Pushkin’s yesterday for lunch where the Vegan Maitake Po Boy sandwich hit the spot. And I made a simple rice and chickpea southwestern veggie dish with easy leftovers for work lunches.
For the Super Bowl, Ron made a huge batch of vegan nachos that came out wonderfully.
And I tried to be good around the decadent eating with spinach salads and a brown rice with veggies and Sriracha. I also tried a new product – Like Meat Chick’n Pieces, sautéed with veggies and creamy garlic sauce using Miyoko’s Liquid Mozz that came out great.
I have also been enjoying comforting soups in the rainy weather like the soy curl turmeric noodle soup above.
For Valentine’s Day, we did the 6-course meal at Vegan Fresh 2U which was a huge amount of delicious food. It included Garlic Green Beans, Clamless Chowder, and Oinkless Sesame Roll.
Spicy Glazed Faux Shrimp, Grilled Steakless Skewer with Garlic Rice, and Charsiu Baked Bao which was a sweet mock pork bun.
Everything was excellent, especially the clamless chowder using mushrooms and one of the best vegan clam chowders we’ve had.
Then I had lunch with co-workers at Burger Lounge which is another excellent location for everyone’s varying diets. I got the vegan Ancient Grain burger with vegan cheese which I always enjoy being a fan of traditional veggie burger texture. But they also offer the Impossible Burger as an option which is awesome too.
Then had a simple soy curl and potato sauté with veggies for dinner after so much rich eating, lol. Ron and I also went to Pho Vegan Asian Cuisine for lunch one day and will be going back regularly now since Amy’s Drive-Thru is no longer an option here, which I’m still bitter about! But the vegan wonton soup hit the spot on a cooler day. And Ron got the vegan Mongolian Beef with broccoli and brown rice.
Boo on the long weekend being over, hoping for a good and productive week ahead for everyone starting with the list.

It is interesting how many vegan restaurants you have near you. We are quite limited with vegan friendly restaurants. Of course I also need to eat gluten-free which is more limiting. Looks like some really good food this week!
