Sunday and June already, crazy how fast this weekend flew by and how fast this year is! It does not feel like June here with mild temps in the 70s and 80s instead of 90s and 100s as usual. Strange, but I am not complaining! And we are still cat sitting for my sister who cat is very full of personality!
She is very persistent when she wants attention, dinner, play time, etc. But also a sweet heart who seems to consider us her 2nd home.
For a 4 day work week, it seemed longer for some reason. But there were some great eats such as simple spinach and tempeh salad, tofu and cauliflower stir fry, leftover pasta salad from our Memorial Day gathering, and a messy, but delicious soy curl and purple potato turmeric sauté.
I happened to see on Facebook that an interesting vegan food truck would be located on my home from work one evening and had to stop to pick up dinner. Vegan Circus is a fun carnival themed food truck with crazy corn dogs, burgers, funnel cakes, and a colorful superfood salad. I picked up the Hot Link Corn Dog for Ron and Unicorn Superfood Salad for me.
The corn dog was a hit with the chunky corn batter and delicious house made ketchup and mustard for dipping with flavors and texture not at all like cheap store bought which were polished off. And being mostly raw vegan and healthy, the salad was a vibrant blend of colors and delicious hot pink dill dressing. I’m looking forward to trying other treats next time I can track them down!
We also headed to Amy’s Drive Thru for lunch Friday where I got the Super Salad loaded with quinoa, tofu, pumpkin seeds, and a wonderful miso dressing. And tomorrow, 6/5, is national veggie burger day apparently which Amy’s is giving out free burgers for!
We also stepped out for spicy vegan Thai dishes Friday night to celebrate the end of the work week.
And tried a new product for dinner tonight we found at Grocery Outlet, The Very Good Butchers Smoky BBQ Plant-Based Ribs. These ribs were a huge hit with Ron, so I was horrified to find they recently closed their doors. Boo!
These grilled very well and had an excellent texture and flavor. Guess I will be heading back to see if Grocery Outlet still has these! Sad and hopefully they can return in some form! To the list for happier news.

Those ribs look awesome! Seriously unique, and I’m also bummed to hear the reason why they ended up at Grocery Outlet. We need more of this on the market, not less!

I love your salad with pumpkin seeds! For me, it’s sunflower or pumpkin seeds that make every salad. We eat salads from now til September because they are so light and yummy! Not to mention refreshing. Love the food truck~ so fun! Nothing like that here!
