Sunday again wrapping up another week of great eats and a productive weekend while trying to be being optimistic about the week ahead. We started Monday with Ron’s great beans and rice dish where he added air-fried BBQ soy curls. I kept it simple with a zucchini, tofu, and rice stir fry another night and lazily had the leftovers with sriracha later in the week. And a great kale meal salad another night.
Tonight was lazy with Trader Joe’s Chickenless Crispy Tenders and roasted Brussels sprouts for a kiddy dinner, lol.
Because there is endless options in vegan burgers to try lately, Ron tried Everything Legendary Plant Based Cheese Burgers this week and gave them a thumbs up. Not exactly Impossible Burgers, but good texture and flavor with visible veggie chunks which I like and no “off” flavors.
There has also been great dining out for work lunches including a tasty curry tofu dish from a local noodle place and the amazing curry panini from Zest Kitchen since I seem to be on a warming curry kick.
We also got to Loving Hut this weekend which I need to get to more because of such a great vegan menu. We had the Pad Thai and Egg Plant Curry.
Also Summer Rolls and the delicious Heavenly Salad which I highly recommend with the plum dressing.
Other eats were more salad, vegan Thai takeout, and interesting lunch yesterday of Sugar Snap Peas, oranges, popcorn, and vegan nuggets continuing the kid theme this week, and more turmeric soy curl and noodle soup which I have been craving with our chilly weather.
Back to the work week and hoping for a good week for all of us starting with this list.

Oh I miss Loving Hut! All the menus are a little bit different, but always reliable and delicious. They need to keep expanding that franchise.
