We still have a house guest, my sister’s kitty, who is full of personality demanding attention, letting us know when it’s dinnertime, and getting creative turning anything in the house into her toy to get our attention.
She is a cute sweetheart and it has been fun having a cat in the house again.
I have also been enjoying a new dressing find, Ocean’s Halo Vegan Wasabi Ranch dressing that paired perfectly with a spinach and kidney bean salad.
It has a kicky and tangy flavor and is very thick and creamy.
Easter was a low-key family gathering at my Dad’s where we enjoyed roasted Brussels sprouts, vegan mac n’ cheese with a decadent cashew sauce, and my go to vegan holiday ham recipe.
Other eats have been simple rice dishes with LightLife vegan sausage and creamy soy curl curry sauté using Miyoko’s Liquid Mozz.
Ron tried a new vegan steak alternative he found at Sprouts Farmers Market, Meati Carne Asada Steaks. It’s made of mushroom root protein and has an interesting flavor and texture that was different at first, but grew on us and he enjoyed paired with steak sauce. We’ll be getting them again and trying other Meati products.
There has been a bit of eating out this week including Zest Kitchen twice in one day for lunch and dinner. I know, but it’s on the way home from work and I was not feeling like cooking after a long day. The new mushroom panini on sourdough is delicious and so was my usual favorite, the veggie quesadilla. And Ron made multiple meals out of the new super protein burrito.
Also Amy’s Drive Thru for salad and vegan burgers and spicy vegan Thai at a local Thai restaurant. It’s been a good week and a productive weekend that flew by too fast. Oh well, hope everyone has a great week ahead starting with the list.

I keep eyeing those Meati steaks every time I’m in Sprouts! I’m so curious to try them, but have to wait until they go on sale.
