Another great day to not leave the house since it’s been raining all day. Not complaining and looking forward to some outdoor time when it dries up and maybe a trip to the mountains. For now we’re tacking house projects, relaxing after a busy work week, and enjoying fun eats such as multiple rice dishes using batch cooked rice.
And an interesting salad using a couple of Grocery Outlet finds.
The Field Roast Sage & Garlic Celebration Roast was a delicious add to the salad with a savory texture. Next we need to try it in sandwiches. And the Plant Perfect Cilantro Lime Dressing was was tangy and kicky without being too salty or strong. It was very thick, had to scoop it out with a knife.
There has also been a good week for eating out with lunches from Amy’s Drive Thru and Pho Vegan Asian Cuisine. And stepping out for spicy that food.
And we had a little fun with a St. Patrick’s Day meal trying a new Corned Beef Seitan recipe. I did not use a food processor, instead used a spin chop to process the tofu and blend in the rest of the ingredients and liked that it came out with more of a chunky texture.
And enjoyed it! It had a nice savory flavor and I like the idea of blending tofu with seitan as a texture option. Now I have plenty of leftovers from it for a bit, great for heading into another rainy work week. Hope you have a great week and the list if a positive start!

Your rice dishes look yummy! And a trip to the mountains sounds great. It’s either raining or snowing here~ we can’t win. Either way, too cold to go outside, going crazy being cooped up!
