Things are getting back to normal here after dealing with Covid-19 last week, we are recovering with some odd residual symptoms hanging around. Wine is still not appealing to me and having odd food cravings and tastes. It’s been hot this week with temps in the triple digits which means early morning walks for Miko when it’s cool and being lazy the rest of the day in the air conditioning. He’s so cute when he stretches out under the breeze from a ceiling fan.
Eats this week are getting back to normal, Amy’s Vegan Minestrone soup, simple spinach salad with a cucumber from our garden, and more roasted zucchini from our garden with a blender hemp basil sauce for dipping.
Gardein Skillet Meal with added veggies for a simple option one evening, more simple salad, and tofu potato stir fry with spicy coconut sauce I found at Grocery Outlet.
I have been into vegan sauce deals at Grocery Outlet lately to jazz up all the zucchini coming from our garden now. I found this Haven’s Kitchen Zippy Chili Harissa sauce at Grocery Outlet for a great price to try for jazzing up a soy curl and zucchini sauté.
Despite the heat, we have been trying to get out this weekend for kicky vegan Thai dishes and a fun trip to Whole Foods for new products to try.
I was excited to finally locate Babybel’s Plant-Based Cheese Alternatives because I am a fan of snacking on good vegan cheese alternatives. Ron was mildly impressed with them and I really liked them for a tasty snack.
Wow on Sunday night being here already! Looking forward to the long holiday weekend next weekend and starting this week off right with the list.

I’m still dying to try the plant-based Babybel cheese! This was my jam as a kid; I always had one in my lunchbox. I know they won’t be earth-shaking based on the original, but it’s totally a nostalgic thing. You assessment sounds about right!

I hope you can find them soon, they were on sale at Whole Foods. I have found memories of them too, nice to see plant-based option now.

Your roasted zucchini looks so yummy! Garden fresh is always the best! Loaded in nutrients, too. And that soup looks fantastic. Spinach is always a favorite in soup. Triple digits, yikes. I can’t even imagine triple digits. Never gets that hot here!
