Wow, April already. What year is it again? Still feels like the last couple of years have been a blur and I am fighting the Sunday blues after a productive and fun weekend. We got our garden beds replanted for the spring and a lot of yard work done. But also wiped since allergies are bad for me this year. Sweet Miko had a good time wondering in the backyard while we worked. His weekend also consisted of napping and cuddling between walks and snacking.

I had lunch with my dad at Blaze Pizza this week which is perfect for me to make a custom vegan pizza while his was, uh, not vegan.

There was also salad with simple hemp parsley blender dressing and delicious veggie-loaded beans and rice Ron made.
Simple noodle veggie dishes and soy curl curry sauté.

More Thai tofu curry takeout and a turmeric soy curl noodle sauté.
I have apparently been in a noodle and curry mood this week because I also tried NuPasta Konjac Angel Hair pasta and it was very tasty and decent texture for only 35 calories, much better than similar style low calorie pasta I have tried in the past.

And I am done after a day of gardening and battling allergies. Hopefully it’s a good and productive week ahead for us starting with the list.

I’m so glad you are getting your garden beds planted! Still too cold here. But sorry about those allergies, they are the worst! There’s a tree in my yard that just kills my eyes in spring!

All these new pasta options are so intriguing! I really like the ones made from hearts of palm. I could just eat those plain with olive oil and black pepper.
