It’s been an interesting week here with us getting through work, trying to keep busy with good projects, and cuddling sweet Miko who seems to be stable with his heart medications. Maybe he’s feeling better, maybe it’s the warming spring weather, or both, but he has been loving long walks this week and cuddle time.
I have been trying to get to a healthier place this week which has been a challenge, but there has been salads, simple stir fries, and noodle soups.
We made a trip to Trader Joe’s last week to find new things to try including Hearts of Palm Pasta which I sauteed with kale, tofu, and marinara sauce topped with vegan parm.
It would also be great with white wine garlic sauce or chilled in a salad since it’s just hearts of palm cut into pasta.
There was also the Vegan Ranch Crunch Salad Kit that I added veggies and chickpeas to for a meal salad.
The lighter creamy dressing added the right amount of flavor without being too heavy.
And we stepped out to a new-ish vegan restaurant in Sacramento, Vegan Deadly Sins.
I’ve been meaning to get to this place for awhile and appreciated the lighter menu with creative veggie dishes. We shared the Coconut Taro Pumpkin & Vegan Chicken and Golden Knots, or tofu, mushroom, and vegetables wrapped soy sheets.
Both were excellent with great flavors and textures and filling while still being on the lighter side with whole veggies and flavorful sauces.
There was also the Trader Joe’s Vegan Meat Lover’s Pizza which was not on the lighter side, but still delicious.
Also the flatbread Just Egg breakfast sandwich from Peet’s Coffee and a simple turmeric potato and squash sauté. We also started to look at options for possibly replacing my car when the lease is up later this year since there is no option to buy it and got a nasty reality check on dealer markups on new EVs and scratched a possible option off my list. Oh well and strange times. We watched The Way, Way Back on streaming, an older and cute movie with a great cast. And Kimi, a good thriller, action movie set in COVID-19 work-from-home times. So here we are at Sunday night again. It will be a good week, right? Yeah, starting with the list.

So glad to hear Miko is doing better. HUGS to you all! I enjoyed reading about the new place your found and the Hearts of Palm Pasta! We are getting more snow again…sigh…Not sure SPRING will actually come this year. Ugggg.

I thought I commented yesterday but I’m not sure if it went thru. The Hearts of Palm Product sounds interesting. A while ago I found mashed Hearts of Palm. It was pretty decent.

I definitely don’t get out to Trader Joe’s enough anymore! I would be all over that salad kit and hearts of palm noodles. Putting those on the wish list right now.

I really like that Trader Joe’s pizza. I don’t get to Trader Joe’s very often because I generally have a pretty specific shopping list and that doesn’t work at Trader Joe’s. But if I want fun stuff and snacks? It’s perfect!
