2 day weekends fly by too fast and especially after a draining week. I think even Miko has been feeling it being perfectly happy to hide under blankets between begging for food. That seems like okay way to spend the week!
Miko is doing okay, but has been coughing more this week which worries me with his heart condition. His breathing rate is still good, but I will be monitoring him and making a vet appointment if needed and possibly trying to move his next echocardiogram appointment up.
I really appreciated the simple, 2 minute microwave cook time for hurried lunch breaks. We also scored Clo-Clo Vegan Pizzas for a fun Friday night dinner with added basil paste, olives, and artichoke hearts.
There have also been turmeric potato sautés, chickpea spaghetti and marinara sauce with a side dish of plain spaghetti to share with Miko.
Curried tofu veggie stir fries, salads, and Ron discovered Wicked Kitchen Spiced Amazeballs are great with spaghetti and red sauce.
And here I am fighting the Sunday blues again and assuring myself it will be a good week. At least I hope it will be a week of positive progress and good news starting with the list.
