Long Weekend Vibes for the List

I appreciate the kind words about last week’s post and still recovering a bit and enjoying a long weekend. Miko has really been enjoying his pile of fresh blankets on his sofa between our long walks.

Valentine’s Day was sweet and low-key, Ron made a great dinner at home and we had a fun gift exchange that included him finding an Angela Roi handbag I was lusting over on ThredUp and buying it for me. My collection of high fashion vegan handbags is a little crazy thanks to ThredUp and Poshmark, but what’s life without whimsy? And they’re all second hand. The the protein chickpea pasta dish with vegan parm he whipped up was fabulous!

There has also been other simple sautés and salads. And kicky Thai takeout to start the long weekend.

Southwestern fiery salad featuring Big Mountain Foods Cauli Crumble that Miko did not understand why I could not share that with him. I also had a little fun with the Cauli Crumble since we’re still working through leftovers from our Super Bowl vegan taco party – I used it, Parmela Creamery Plant-Based Sharp Cheddar shreds, and fresh spinach to make a vegan quesadilla that came out great!

Very simple, but the flavors worked so well together and the cheddar shreds melted perfectly for a delicious combo.

Now I am enjoying another day off before heading back to work tomorrow. I am still fighting burn out and motivating myself that it will be a good week. Maybe we’ll get out for some fresh air today and take Miko. But first get motivated with the list.

    Recently I found Smoked Gouda Slices of Parmela while in Buffalo. Not too shabby. Cricket has gotten into blankets more the last couple of years. She won’t wrap herself up in them like Paco used to but she will go underneath them.

      Yum, I tried those awhile back too and yum! Miko will more go underneath them too and pouts until we help wrap him up now. :-)

    I can never find Parmela around here! It really is great though, and that quesadilla looks perfect. Nicely charred and super thick, as it should be.
