That’s what this week has felt like since it’s been very busy at work with a lot going on and not a lot of resources currently. Sweet Miko has been such a cuddly buddy always wanting to be in my lap or in the same room with me when I am home.
And we have been trying to have more fun this weekend getting out for Thai food, finishing the Nintendo Lego project, lots of walks with Miko, and deal hunting at Grocery Outlet which has been great.
But the Sunday Blues are intense and I am trying to look at any positive motivation I can and convince myself it’s going to be a better week. Last week I worked through a couple of lunches at the office and having a new Chipotle just a couple of blocks away has made that temptingly easy when there are great vegan options to order through the app and pick up. I can say the new spicy vegan chorizo in a loaded burrito bowl is delicious.
Other recent interesting finds are Ocean’s Halo No Fish Broth, which was great in a hearty rice noodle soup, and Lucky Food Seoul Kimchi Mayo, great in a spicy burger Ron did.
Also Wicked Kitchen Jalapeno Burgers that Ron liked. Not as great as Impossible, but decent texture and good kick.
Other eats are more simple veggie sautés, beans and rice with vegan sausage, and more meals salads.
It’s been a good week of eats, but a challenge to get to a healthier place while managing work stress and something I am still working to improve. Hoping the week ahead is positive and productive for all of us starting with the list.

Which flavor of Field Roast are those in the pic? Not sure if I have seen those here. I sooooo wish we had a Grocery Outlet here! Those are some nice prices! I’m in the process of posting multiple posts from the weekend. I did already post two but have at least 2 more to catch up on. Cricket has been like Miko…Snuggle-Bunny!

I totally agree, it does often feel like a slog, especially pulling through to the end of winter. Luckily, good food does wonders to help!

Hummmm…not sure where my comment went from last week…but…I think I commented on the flavor of the Field Roast. I don’t recall seeing the YELLOW label here…what flavor is it? I do enjoy the Spicy Mexican Chipotle (Red Label)
