Whoa, Thanksgiving really is next week. Still trying to wrap my mind around that and looking forward to down time with family and friends. It looks very fall and festive here with overcast skies, turning leaves, and chilly temps. Miko has been refusing his early morning walks because it’s been too cold and misty outside. But he’s happy to head out when the sun comes out.
And snooze inside when it’s chilly.
Eats this week have been pretty typical – delicious beans and rice made by Ron, simple tofu stir fries, broccoli slaw salad with hummus dressing and chickpeas, and curried soy curl sauté.
There has also been kicky curry Thai takeout, simple carrot ribbon and bean salad. But check out the crazy Impossible burger with pretzel bun and cheezy vegan chili tots Ron whipped up!
I am still working through our container of Miyoko’s Creamery Liquid Vegan Mozz, that’s 6 small and mediums pizzas with enough leftover for one more I think. This one using a small sourdough pizza crust, vegan sausage, spinach, and topped with Trader Joe’s vegan parm shreds for a treat that was delicious.
I know Big Mountain Foods Superfood Brekkie Links were intended to use for breakfast, but they are also delicious sautéed to a slight crisp and added to a large spinach salad with sauerkraut, spinach, and vegan ranch dressing.
And back to work tomorrow for a short week before a long Thanksgiving weekend. Hope you have fun plans and not stressing about the preparations. And maybe find some inspiration in the list.
