Fall Fun Times for the List

Happy Halloween! Have any fun plans? We’re handing out candy, recipe experimenting, and drinking wine – not a bad way to spend it. Fall is in full swing here and it’s gorgeous with rain, turning leaves, and greenery returning after last weekend’s massive rain storm.

A few weeks ago I snapped a pic of an eerie dried up lake/retention pond on my running trail that I have never seen bone dry before. Below is the pic I got this morning after the all the rain from the bomb cyclone storm last weekend completely full now.

What a difference made by one weekend of rain. During that storm, we got the fireplace going again which Miko was very happy to enjoy, but we need to limit his time in front of it so he does not get too hot with his heart condition.

Last week he had his 6-month echocardiogram and it was not the great news I was really hoping for. He does not have an issue with fluid build up in his lungs which is good, but his heart has gotten larger pressing on his trachea more causing more coughing and high blood pressure in his lungs. So the dose size has been increased on some of his meds and two additional meds added – the poor guy is taking so many pills now. We have been lucky that his kidneys have been handling the meds okay, but I am worried that could change with the addition of more and will find out after another blood test in a week or so to check.

Eats this week have been a delicious chickpea and kale pasta dish, soy curl and tofu stir fries, and carrot ginger salad.

I also found Miyoko’s Creamery Liquid Vegan Pizza Mozzarella and had to try Friday with home made pizzas.

The texture and flavor is pretty spot on while still being lighter and not as heavy as loads of vegan mozz shreds, I’m really impressed with it and looking forward to making more pizzas.

We also have a collection of Big Mountain Vegan Foods for a recipe challenge and to try and Ron tried the Big Brat Veggie Links yesterday and gave it a thumbs up for texture and flavor.

The texture is hearty while not trying to mimic greasy meat, but celebrate veggie alternatives while being satisfying. I am looking forward to getting creative with more if their products very soon.

And we attended a Kyle Vincent concert at a friend’s house this weekend that was catered by Pho Fresh. Kyle is a vegan artist that is getting back into performing after the pandemic, grew up in the bay area, and very talented. The weather was perfect for outdoor dining and backyard concert, we had a great time meeting interesting people and eating a delicious vegan 3-course meal of lettuce wraps, kicky vegan beef noodle soup, and shish kabobs with rice and asparagus, yum!

Goodness, it was such a nice weekend that it’s tough to face the work week, but heading into it with positive optimism. That sounds good, right? I hope you have a great week and enjoy the list!

    I loved seeing the photos of your area. I’m glad you are ok from all the weather. I’m so sorry to hear about Miko’s meds and health concerns. It’s so hard seeing them on so many pills. It seems like you are keeping busy, tho! Sounds interesting some of the things you are able to do lately!

      Thanks and us too! So true, it’s tough to see them age when we want them to feel as good as they make us feel.

    The leaves are so pretty where you are! Sadly….we got rained out and the leaves fell before they changed color =(
    Halloween was fun….but ugh, dressing 4 kids and 2 dogs in costumes is a ton of work! LOL.

      Bummer on the leaves, hope you get some fall colors! Goodness, I can imagine the chaos with so many costumes, but it sounds adorable!

    Happy belated Halloween! It was a quiet one here; Luka and I wore matching pumpkin shirts and walked the neighborhood, but that’s about the extent of it.

    Ohh I’m so excited about the liquid pizza cheese. I haven’t seen it yet but heard that it will be in Sprouts now, so I’ll keep my eyes peeled. Also, I just got those sausages too! I can’t wait to taste them now.

      The liquid mozz is fabulous and actually makes a lot of pizzas, we used it on 4 medium ones so far and have some left.
