I think I’m ready for another week of work after a productive weekend, at least that’s what I’m trying to convince myself of. I saw a meme saying weekends are feeling more like 30 minute lunch breaks lately and it’s so true! It seems like more are feeling more work and less play during these interesting times, but I am thankful for keeping busy. And for lovely spring views here, geese are everywhere, blue skies, and lots of blooming trees.
Miko is still thankful for having us home more and warm beds to snuggle in.
We ventured to IKEA yesterday which was very daring on a busy weekend during a pandemic. But I finally decided on patio furniture for our patio after fretting on tons of pricey options and was ready for a little adventure. It was actually not bad, there was a line outside to get into the store, but it moved fast and was considerably less crowded inside. The dining area was not open which was a bummer, but we were on a mission to get inspiration for other house projects and get all 8 boxes that assembled into this patio set. Now we’re ready for outdoor entertaining at some point down the road. We’ll just enjoy the set for now sipping wine or coffee I guess, haha.
It was another busy week and lots of simple eats and me failing to get more pictures of them. Tempeh stir fries and loaded kale salads dominated this week for dinner and easy lunch leftovers in the office.
On our beach getaway last month, my sister and I discovered how delicious Trader Joe’s Vegan Caesar Dressing is, especially with extra pepper added to the salad, so I had to grab it last weekend for romaine broccoli slaw salad with chopped tempeh.
Hubby found something new to try – Good Catch Plant-Based Fish Cakes Thai Style. They come frozen and he air fried them to try for dinner tonight. But they were not a hit for him, he found the “fishy” flavor too strong and off-putting. I did not hate them, while the flavor was strong, they were trying very hard to be high-end restaurant crab cakes blended with lemon and strong herbs in texture and flavor. But they would pair better with a mild dipping sauce.
I went with a large kale salad for dinner and added chopped and sautéed Sweet Earth Santa Fee burger for a fun meal salad. They are more like traditional veggie burgers with visible beans and corn, but a hit for me in flavor and texture.
And now I am fighting the Sunday blues, weekends really seem to go by faster lately. But hopefully this list will be a good start to your week.

LOVE the outdoor dining set! Ikea is the best, and good for you for waiting in line to get in. I’m so not patient enough for that. LOL!

Mmm, I do love Trader Joe’s fresh dressings! The Caesar and green goddess are my all-time favorites. The problem is that one bottle is basically a single serving for me!

So true, luckily they seem to be lower calorie per serving compared to other creamy vegan dressings.

I’m glad you were honest about the “fish” cakes, because I would have spent a lot of time trying to find them. But I find that my tastes align with yours and your husband’s, so you saved me a lot of time ;-).
The plant-based Trader Joe’s dressings found in the produce aisle are super good. The almond butter turmeric and spicy cashew are ridiculously awesome. Either one with spiralized zucchini noodles and an assortment of chopped veg and a little baked tofu make a pretty stellar salad.

Thanks, they were interesting, but too strong and he fell back on using the Gardein Fishless Fillets instead which are one of his favorite.
Yes, I have been making more trips to Trader Joe’s lately and picked up the Carrot Miso dressing for salads this week.
