VCC Votes and Great Eats

What a week, right? I’ll leave it at that and note that Miko has been all sorts of cute this week being a sweet cuddle buddy when working from home, sharing weekend breakfast cereal with me, enjoying his dog friendly plates with us at dinner, and loving that it’s finally cold enough to use the fireplace.

I tried to get a little more creative with eats this week beyond tofu stir fries and salads, I used tempeh for a delicious potato curry sauté.

Hubby also tried Beyond Meatballs with spaghetti and gave them a thumbs ups. I created a competing version of the dish using spaghetti squash and pasta sauce loaded with beans. Miko is such a spaghetti squash fan, he had his own plate of plain squash.

Oh, and there was a tasty veggie couscous dish and a delicious Shepard’s pie Ron made with Impossible Burger tonight.

We also got in a lunch date at Pho Vegan Asian Cuisine for spicy General Tso’s tofu and spicy tofu curry Thai takeout.

Yesterday we had a great meeting to discuss the voting results for the Sacramento Vegan Chef Challenge with lunch from Pho Fresh. And there was plentiful amounts of food from their vegan menu! Noodles, breakfast rice, and stuffed buns.

Rice noodle rolls and veggie rolls, I had an impressive plate and great socially distanced conversation outside tallying votes and best dishes with a vegan group.

It was a great Vegan Chef Challenge despite the covid-19 challenges this year and I’m thankful it still happened and gave diners, like me, something to enjoy and look forward to.

Now we’re trying to look forward to a busy week ahead, at least busy weeks fly by fast. And it’s cold here with lots of rain in the forecast and snow in the mountains! The holidays are near, that’s something. I hope you have a great week and this list helps.

    Oh wow, so much goodness going on here it’s hard to know where to start, but those BUNS! I’d do terrible things for those little stuffed morsels of savory delight. So perfectly plump and golden brown… I genuinely wish they could ship to Texas!

    You surprised me by saying that it was cold enough to use the fireplace! It has been weirdly warm here~ enough to be able to work most of the day outside. Food looks so yummy as usual.
