Making Positive Changes for the List

Hi there, how are you doing? It’s been another quiet-ish week and weekend here with me partially working from home and the office. Our gym re-opened Friday which I was tempted on, but think I am going to wait it out until July and keep working out at home and going for runs. While I miss the gym, the outdoors have been gorgeous this week and look at how the geese babies have grown – so cute!

I have been trying to eat healthier getting in lots of veggies and take out from Pho Vegan Asian Cuisine one night thanks to sweet hubby.

And there was also a delicious Sweet Earth veggie vegan Pizza, lots of chilled watermelon and fruit this week as we head into summer, and delicious banana soft serve with peanut powder and dark chocolate chunks.

I am thankful to be able to dine-in again at Pho Vegan Asian Cuisine, hubby and I stepped out for a nice lunch on Friday.

I have also been doing lots of grocery shopping this weekend looking for new fun things to try at Grocery Outlet, Whole Foods, and Sprouts – our pantry might be getting a little crazy! But I finally found Miyoko’s Creamery Farmhouse Cheddar to try with Laiki Rice Crackers and it was fabulous!

And I bought a large amount of Lotus Foods Millet & Brown Rice Ramen Noodles at Costco last weekend because, again, grocery shopping has been too much of a source of entertainment for me lately! Anyway, I used some in a simple ramen tamari and sesame stir fry loaded with veggies for a simple, comforting, and delicious dinner.

And Miko has been a true buddy following me all over the house and just being cuddly, such a friend during tough times. This week, well month, I am trying to focus on the positives which is not easy now. I’ve been finding I need to spend less time on social media just for mental health and focus on productive and positive projects. We’re making some great progress on the garden, with exciting plans to look forward to. Maybe updating my fitness goals to try different home workouts since I will be working out at home longer. I hope this list can inspire new fun and you have a great week!

    What stunning nature photos! It makes me want to go on more photo walks…. I’ve really taken my surroundings for granted.

    And those look like some good summertime eats. Always gotta get those veggies in.

    Those geese babies are adorable! But I shudder what my dogs would do unleashed. They are crazy! And I know what you mean about the gym…..I wouldn’t be ready either! Not yet.

      Aren’t they? I’ve watched them grow up the last few months, so cute. And yes, making the home gym work here still.

    Oh my gosh, I LOVE Miyoko’s new cheddar cheese. It’s so good.

    You’re lucky that gyms have opened in CA. Illinois gyms probably won’t open until the end of June, and that’s if we’re lucky.

      Me too! So great with crackers. True on gyms, but I’m not comfortable yet with the growing number of new cases.
