Whew, oh happy long weekend! And it’s the last day of August, crazy! As little hints of fall nearing, I am getting excited for turning leaves and pumpkin season. Miko is happy if it means cooler temps for more walks.
Things are changing with my job because I got the promotion and am starting in management! Happy news after 3 months of waiting and the re-organization of our group could not have been more perfect to address the challenges, so I’m very happy about that. But there may be more work hours in the future while I adjust to the new role.
Sunday we saw Ken Jeong and Joel McHale’s comedy show which was great, especially for hubby as a fan of Community.
It was a late show on a work night and I was a little tired after a long day volunteering for the yard sale, but very worth it for comic relief before starting the work week.
We’ve also had fun finding and trying new plant-based products at our local Sprouts, hubby tried The Alpha Burger serving it like a mushroom topped steak with a potato. The burger is pretty convincing looking with grill marks.
While they aren’t like Beyond Burgers, they are pretty good for being considerably lower calorie and low fat with 21 grams of protein per burger.
We also tried No Evil El Zapatista Chorizo which comes in a loaf to cut slices from or chop.
I used a spin chopper to make grounds, crisped up in a fry pan and added to a Mexican themed salad with So Delicious vegan cheddar shreds, black beans, and corn.
The grounds added a great flare and texture to the salad and would also be great added to grits, hash browns, beans and rice, etc.
I have not been great about documenting eats this week because it’s been a little crazy, but there was the delicious Chana Wrap to go from Zest Kitchen one night.
Simple tofu stir fries and the always delicious Kung Pao Tofu Dish from Pho Vegan Asian Cuisine.
I have also been running folders for the Sacramento Vegan Chef Challenge to local vegan restaurants and some new restaurants inviting them to participate this year.
I am excited for this year’s challenge, it looks like more restaurants will be participating and I’m looking forward to having more options closer to us. I’ve got one more folder to run this weekend and lots of social media promotion to participate in for the event. But I love getting the word out there about vegan cuisine and encouraging and rewarding more restaurants for adding plant based options to their menu promoting them in return to a wider range of diners. We also like to say this event is more for omnivores and exposing them to creative plant-based options. Looking forward to the new creations this year!

Congrats on your new management position!! So happy for you!!!!~ And yes, we are happy about the cooler temps, here too. I have my moms dog too about half of the year my parents travel so much and cooler temps are necessary for these dogs!

First of all, congrats! I had big positive changes in my work life this year as well, and it’s the best!
Second, my pups Chester and Paddington are with Miko on that one. It was such a HOT summer… I am also very happy for autumn. My favorite season!
