Miko has been lacking energy lately while he’s on multiple medications recovering from a gland infection. I was so worried when he wasn’t up for his long weekend walks until I read the side effects of the medications he’s on – poor guy.
We both are looking forward to him being his happy, bouncy self. Until then he’s been getting lots of vegan hot dog chunks with pills stuffed inside and finding creative ways to spit the pills out.
I love Brazil nuts but rarely buy them because they can be pricey. But they are oh so delicious blended into creamy dressings and sauces. And they really work well in this thick and rich parsley dressing.
Brazil Nut Parsley Dressing
- ¼ cup Brazil Nuts
- bunch of parsley
- 1 clove of garlic
- 2 tbsp. tahini
- 2 tbsp. miso paste
- juice of one lemon
- ¼ cup water
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy. Makes 4 servings.
This dressing is thick with a vibrant green color.
