It’s been a draining week at work, so much going on that I’m not at all feeling creative when I get home. Luckily not a lot of creative energy is needed for a good salad and salads always feel like a win. Especially when there’s a huge tub of hummus in the fridge ready to be turned into a simple dressing with complex flavors.
Fast Hummus Dressing
- ¼ cup hummus
- 1 tbsp. Dijon dressing
- 1 clove of garlic
- 2 tbsp. miso paste
- 2 tbsp. nutritional yeast
- water as needed
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy. Makes 4 servings.

Just about any blend of greens, beans, fruits, and veggies can make a great salad and the creamy and rich flavors in this dressing make it more exciting.

While still cooling in the summer heat.

There is a strong garlic and Dijon flavor that works well with creamy chickpeas and tahini.

But Miko was not happy I would not share since it contained raw garlic.

Sure, it’s such a great staple to keep on hand and just about any flavor can work in this dressing.
I love using hummus as a quick dressing too! I’m usually pretty lazy and just use it straight, slightly watered down or thinned with a nice finishing oil, though.
That works too, whisk together with some apple cider vinegar and tamari.
