Happy Mother’s Day to all the mother’s out there! I celebrated with my mom yesterday and trying to have a productive day at home today which is turning out to be just as lazy as I prep for a busy week. Leela is doing fine and got good news from her vet appointment, her eye had a surface scratch that irritated it and I’m relieved it wasn’t serious. She has been sleeping a lot lately, happy to sleep most of the day and be lazy. But seems to be feeling good and loves to eat too.
Miko has been acting like a bouncy puppy ready for multiple walks and lots of toy time. And he’s been enjoying the new couch laptop table we got from IKEA either sleeping under it or happy to be back in my lap when I’m using it.

It’s sheep grazing time and the nature preserve near our house is full of them. I love watching them on runs and dog walks, we stood with the dogs for awhile this evening watching them and the sunset.
I found a new product for hubby to try, Vsoy Meatless Vegan Soy Beef, because it looks like the beef he’s gotten in vegan restaurant dishes. It comes in a package of dried beef “chips” that need to be re-hydrated before cooking. But it’s a big bag for the price and we’re looking forward to trying them in stir fry dishes and marinades.

I’ve been trying to get more outdoor runs in after work on nights I don’t go to the gym, the sunsets this time of year are gorgeous and it’s not too hot yet.
Lots of eats this week from salads, streamed squash, tofu veggie stir fries, and a delicious curried sweet potato and chickpea dish I love to make big batches of for work lunch leftovers.

Hubby made a great parsley pesto pasta dish with vegan chick’n for dinner last night.
And we’ve been eating out a bit too, more great dishes from Pho Vegan Asian Cuisine and spicy Thai tofu dishes.

Yesterday I celebrated Mother’s Day with my mom and my sister’s birthday by having lunch at Veg in Midtown Sacramento. They had an excellent Mother’s Day brunch menu for the weekend that included delicious fried oyster mushrooms served on gluten-free waffles with pink insides – so pretty. And the sweet and savory curry flavor in the sauce really made it a unique and delicious creation. I got the falafel burger which was also great.

After we walked around the area and shopped and found another new vegan restaurant is opening near by – Good Vibes Vegan Cafe! Also near our new vegan burger restaurant – Burger Patch. It’s a good time to be a vegan in Sacramento!
A couple of weekends we scored an interesting looking frozen vegan quiche at Grocery Outlet hubby wanted to try because he is a fan of the quiche format.

The verdict? Eh, it was edible, but not something he’s interested in getting again. Think we need to try making one from scratch.
I’m a little sad the weekend is over, it is looking to be a busy week at work which means it could fly by too. But first the list to start the week with.
The List:

- Christina Applegate’s favorite vegan restaurant. I need to get to it soon!
- Love this 99-year-old runner.
- The number 1 reason to go vegan?
- So many celebrities are going vegan.
- I know hubby is looking forward to trying this new Lightlife product.
- Del Taco’s Beyond Meat taco is a hit!
- Tyson Foods entering the vegan meat market.
- Looking forward to this new vegan series on Discovery Channel.
- Lacing hacks for more comfortable running shoes.
- Boise has a new vegan restaurant.
- Running is the best meditation practice. I agree, it forces me to focus on my surroundings and go through my thoughts.
- More vegan pregnancies and vegan kids. My furkids are vegan, does that count?
I love how you see sheep on your runs! We don’t have too many sheep here, I don’t know why. My son loves sheep and says Bahaaa all day but only sees them in movies. I feel like that a lot too about food we sample, it’s okay, but wouldn’t eat it again!
Yes, me too! So nice to see nature. Agreed on new foods, many times it’s just eh and not worth the price.
Aw man, bummer on the quiche! It seems like such an incredible, rare find. Too bad it didn’t quite live up to expectations. I’ve been a bit disappointed by the brand’s pies in the past though, so I can’t say I’m entirely surprised.
It’s a bummer, I tend to get so excited finding a new vegan product with high expectations.
