Miko would like the weekend to be here, he’s ready for more couch cuddle time with hubby.
Me too. I’ve been hitting my usual grind of home elliptical workouts or gym treadmill workouts after work and simple veggie stir fries.
I was so excited to find zucchini and yellow squash at Costco, love those in stir fries and I’ve been having fun catching up on shows and trying new shows while working out at home. Sex Education is pretty good on Netflix and more, uh, edgy than US shows which I like. Just started watching Mom on Hulu which I didn’t think I’d like, but do so far.
I also like comforting, loaded salads. Add beans and sauerkraut and it’s a great meal.
This monster salad inspired a simple dressing with a strong tang and garlic flavor.
Super Lemon Garlic Dressing
- 2 cloves of raw garlic
- juice of 1 lemon
- 1 tsp. lemon zest
- 1 tbsp. miso paste
- 1 tsp. Dijon mustard
- 2 tbsp. tahini
- ¼ cup hemp seeds
- ¼ cup water, as needed
- pepper to taste
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy, makes 4 servings.
I had a lot of fresh garlic and a stash of ripe Meyer lemons from a co-workers tree to use up and such simple, but power ingredients can make such a great dressing.
It coats perfectly and the tangy flavors work well with sauerkraut or cultured veggies blended in.
Make a salad powerfully good with this simple dressing.
