Wow, this weekend flew by too fast. Miko agreed, he jumped out of bed so excited for his long walk Saturday, he dragged his blanket with him.
Of course there was a deal hunting trip to Grocery Outlet where I scored cheap cans of organic beans, hummus and almond dips, and Kite Hill Vegan Yogurt which I’m excited to try.
And hubby tried Amy’s Kitchen Vegan Pot Pie for lunch one day and gave it a thumbs up for flavor and being a hearty alternative. It was loaded with veggies and had a nice texture to the crust.
Other eats this week included delicious vegan chili made by hubby with Beyond Crumbles and Daiya Cheddar Shreds which is becoming a winter Sunday night tradition here.
Multiple oil free tofu stir fries which is my go to post gym workout dinners lately for being hearty, but simple and fast.
Salad with roasted acorn squash.
More salad, and roasted spaghetti squash with a southwestern black bean saute with corn.
There was also one lunch at Pho Vegan Asian Cuisine for the Eggplant Tofu Dish with brown rice – yum!
Friday we stepped out to The Porch Restaurant and Bar for the vegan items on their Dine Downtown Menu including Vegan “Chicken” and Waffles.
The Sweet Chili Cauliflower was delicious! Hubby liked the vegan tofu “chicken” strips on the waffles, but felt they were a little too tofu-y. I got the Black-eyed Pea Frito pie which was delicious topped with avocado and fresh veggies.
And the vegan Zucchini Cake for dessert was also delicious with a great texture to the cake and very decadent icing paired with homemade apple sauce.
We also found a new dip to try – Oasis Naturals Organic Smokey Chipotle Almond Dip which is a very kicky nacho cheese sauce and wonderful!
Finally hubby surprised me with a new product to try for my less plastic waste this year – Tree Naturals Green Tea & Coconut Conditioner Bar.
So far I’ve used it once with a Lush shampoo bar and it seemed fine. My hair didn’t feel as slick right after as compared to using bottled conditioner, but tangles weren’t and issue and my natural curls seemed to behave the same. So far so good!

Oh, I managed to score that almond dip and really enjoyed it, too! It reminds me of Bitchin’ Sauce but being from Grocery Outlet, much more affordable, of course. ;)

That vegan pot pie looks really good! Haven’t had any roasted acorn squash in forever, too $$ this time of year. But I enjoyed your pics! That zucchini cake looks scrumptious!

It was and impressive for being a lighter pot pie. Yes, we get a little spoiled with cheap produce in CA, winter squashes are still everywhere here.
