Tangy Salads & Fun Runs

Wednesday means we’re closer to the weekend and that’s all good. I went for a sunset run this evening to break in new running shoes and just loved the gorgeous views and cool breeze.

I’m on the search for my new favorite running shoes because my current favorites, Brooks Glycerin 14s, are no longer available in my size and I not a huge fan of the toe box changes in the Glycerin 15s. I have odd shaped feet with narrow heels, but slightly wide fronts. Not wide enough for wide width, but too wide for many regular widths which makes finding a good shoe challenging. I’m trying Nike LunarGlide 9s currently and so far so good for short runs, but the toe box area my be an issue for longer runs.

Sunday was great, I had a pleasant long run in the morning visiting grazing sheep, we saw Avengers Infinity War, which was awesome, and relaxed at home.

I’m ready for more relaxing already, but will settle for vibrant comfort salads. There are allergies/colds all over the office lately and the weather is warming up, so I’ve been craving fresh, healthy salads and love adding sauerkraut for tangy zing. This week I’m working through a package of Sonoma Brinery Mild Smokey Chipotle Raw Sauerkraut which has been delicious in meal salads. It blended perfectly with a simple carrot ginger tahini dressing.

And beautifully with a spinach and spicy black bean salad with blended avocado garlic dressing.

I think I will be picking up a package of raw sauerkraut every week for the summer just for great salads.

Other great eats so far this week include broccoli and vegan “beef” from Pho Vegan Asian Cuisine for lunch.

And very simple tofu stir fry after the gym yesterday with yellow squash, broccoli, and onion. Filling, high in protein, but not too calorie dense.

    Lots of allergies and colds here, the grass is nice but does nothing for my runny nose =( So yes, craving healthy foods here, too! So glad that avocados are now a $1 at the grocery store. Love that broccoli! Eat it everyday!!!

      Yes, I’ve been working with a new co-worker this week who is sick and it’s spreading in our department – ugh! That is awesome on avocados, I love buying bargain bags of them.

    Yes, it’s finally starting to feel like spring/summer and I couldn’t be happier! I’ll take the allergies if it means warmer weather and more daylight.

    Kraut salads are awesome, and I do love that brand too. Trader Joe’s at least used to sell a great version that had little slices of Persian cucumbers mixed it… It’s been a while since I looked for it so I’m not sure if it’s still there, but if it is, I highly recommend it!

    Tofu broccoli stir fry is one of my comfort foods! Probably one of the first dishes i learned to cook and always hits the spot :)
    Have you tried kimchi? I’m totally obsessed with it myself, i put it on everything especially salads and then i whisk the kimchi liquid with a little oil for salad dressing! Mother in law brand makes several vegan kimchi (although i was eating so much I started making my own white kimchi since it’s so easy)

      Mine too, so simple and filling. Yes, I love kimchi and even found spicy kimchi sauce at Costco to use in blender dressings.
