I am fully enjoying our long weekend and having a lazy morning this morning – planning a late run here in a bit then off to a Sacramento Vegetarian Society board meeting and planing for next year’s SacTown VegFest. It’s been an interesting week with hubby on business travel and me getting the house to myself which is both nice and lonely. It’s been so busy at work lately, so coming home to chill in peace and quiet has been good to a point. I’ve also been watching The Office and Grace and Frankie on Netflix and reading more with a sweet lap buddy keeping me company.
I also took Friday off work to make it a longer weekend, have a down day at home and catch up on things like getting donation items dropped off and deep cleaning the kitchen. Also working with an elite vegan runner to start a new local vegan running group I’m excited about and we’ll hopefully have a site up soon for that and regular running meets.
Hubby got home Friday night and Miko and I have been very happy to have him back at home this weekend.
I’ve been in a little funk this week too with the crazy news and work stress I think and disconnected from Facebook and Instagram for a few days which has been nice. Not that I have an issue with Instagram, I just have not been driven to check it out or update it lately.
I have been really into getting creative with turmeric and roasted kabocha squash coated with a mixture of turmeric, nutritional yeast, and spices to dip in a ginger hot sauce blend.
Very tasty and the left overs were great chopped in salads or used in stir fries during the week.
I also had lunch one day with my mom at Pho Vegan Asian Cuisine.
That mock orange “chicken” is delicious!
This was an odd, but tasty saute with canned pinto beans, veggies, and a spicy tamari sauce blend for dinner one night.
And a tofu turmeric stir fry using the kabocha squash leftovers.
I had a partial back of Gardein breaded “chicken” strips to use up and chopped them up into a veggie stir fry.
The breaded coating separated, but also added a nice flavor and texture to the veggies.
And this tasty tofu stir fry using spicy curry paste and coconut milk which blended perfectly with chopped sweet potato.
We’ve been having fun this weekend too, we stepped out to see Black Panther last night and I am spoiled by the new luxo reclining seats most theaters have now.
Especially not having to be too close to a coughing neighbor or dealing with a kid kicking the back of the seat – nice!
Of course I’m still having fun finding deals on new vegan products to try at Grocery Outlet, the latest find are these Hippeas Organic Chickpea Puffs in the vegan white cheddar flavor.
They have a surprisingly tasty cheesy flavor and dog friendly ingredients which is great because Leela loves them too and I feel better about her eating these than crappy, processed dog treats.

It was a nice weekend, wasn’t it? We had a nice day trip on Saturday and the items will keep me busy blogging for a couple of weeks – between that and some new books I am waiting for, that is!

Oh, I love those Hippeas! The fajita flavor is particularly tasty; it kind of reminds me of falafel, actually, since it has a strong cumin flavor.

Yes, love the fajita flavor too. Picked up the pepper flavor on the last GO trip, but have not tried it yet.
