Smoky Cheddar Dressing

Whoa, November already. I’m a little sad and glad Halloween is over, part of me wishes we celebrated it more with parties and haunted houses while the other part is glad to be done with the mid-week stress of it. I am actually looking forward to the cooler, rainy weather this weekend to see movies, play Mario, and watch more Stranger Things 2. And to enjoy more comfort food flavors. This fun avocado based salad dressing screams cheesy comfort food without the baggage of empty fats or empty carb calories. I do a lot of lighter cheesy recipe variations because I never get tired of cheesy comfort especially when it’s coating nutrient dense whole foods for the perfect blend of comfort.

Smoky Cheddar Dressing

  • 1 large or 2 small avocados
  • 2 tbsp. apple cider vinegar
  • 3 tbsp. nutritional yeast
  • 2 tbsp. minced onion
  • 1 tbsp. miso paste
  • 1 clove of raw garlic
  • ¼ tsp. liquid smoke (or to taste)
  • ¼ tsp. turmeric
  • dash of cayenne
  • ½ cup water, as needed

Place all the ingredients into a high speed blender and blend to a smooth and creamy texture. Use as a thick salad dressing, dip, or creamy spread. Makes 4-6 servings.

The texture is very thick and creamy which I love about avocado based blender dressings.

Perfect for coating a hearty kale and cabbage salad with chickpeas.

I paired the salad with steamed spaghetti squash because I’m already on a winter squash kick, they’re warm, hearty, and filling while being low calorie and high fiber.

The dressing has a great savory, smoky, and garlicy kick with a smooth and rich texture, perfect for cooler weather salads.

While Miko pouted about not getting to try it, I did share the spaghetti squash with him.

    Any dressing with avocados looks great to me. Glad Halloween is over too! I’m sick of the kids whining and complaining about costume malfunctions and besides, it was freezing here, it actually snowed on Halloween. Bleh.

      Yes and agreed! I need to try a pasta sauce with them next. Haha, I can see that too! My sisters spent so much on Halloween costumes for their kids that my parents would never have! Wow on snow, hope that was fun for the kids!?

    Oh yum! I wouldn’t think to start with avocado for a cheesy dressing, but that looks awesome!

      Yes, avocado is perfect for lighter cheesy dressing with a creamy texture.
