So much I want and need to do and so little time, that seems to be a trend this week and I hate that. The poor pups get clingy and I feel guilty for not getting them out on long enough walks before rushing to work in the mornings.
I’m looking forward to more weekend time after this weekend’s half marathon. As much as I love running an am a little bummed to not be doing the California International Marathon this year, I’m glad to have more time to focus on speed training, shorter fun races, and other projects when I’m not working – like creating healthier recipes.
I love thick and creamy dressings, especially ones that pack a flavorful kick. This simple, taco-themed hemp seed blender dressing does just that with festive seasonings and a thick texture for coating without oil or crazy preservatives.
Hemp Taco Dressing
- ⅓ cup shelled hemp seeds
- 1 tsp. cumin
- 1 tsp. chili powder
- 1 tsp. paprika
- 1 clove of garlic
- dash of cayenne (optional)
- 2 tbsp. lemon juice
- 1 tbsp. minced onion
- ½ cup water as needed
- salt and pepper to taste
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy! Makes 4 services.
It has a warm, golden color with warming flavors, perfect for cooler weather salads.
Also perfect paired with spicy pumpkin seeds and kidney beans added to this salad.
It adds a fun, taco-night flare to a hearty meal salad.
And coats with savory and creamy comfort.

As always, your dressings look amazing! Taco-night is always popular here but the neighborhood hoedown is coming up and I need to bring something special =) And I feel guilty about the dogs too, but all they want to do is sit on the couch! so lazy.

Aw, thanks! :-) Leela is a lazy dog lately too, poor thing has not been enjoying her walks much lately and going for more carries. :-)

Mm, more delicious dressing inspiration! When the temperatures finally drop, I think this would be fantastic as creamy pasta sauce, too.

Thanks and very true, there’s just enough warming spices in it.
