Avocado Miso Dressing

Thank you for the kind words on the Shamrock’n half marathon, it’s been a tough training season which makes me look forward to better running weather ahead with a more aggressive training schedule. It’s been spotty this week while still recovering and keeping busy with work. But nice to rest a little. Sweet Miko continues to provide his floor cleaning services under our dining table after each meal.

I must be a messy eater. It’s hard not to be with huge salads coated in more avocado dressing. I know, more avocado recipes – have I mentioned I’m ready for spring? And can’t resist buying them in bulk when they’re on sale. This simple avocado dressing is tangy with a savory depth and a slight flare from red pepper flakes that works. It packs two other ingredients I’ve been obsessed with lately too – ginger and miso paste, but no oil or sugar. This simple list of ingredients is fast to toss into a blender after a long day.

Avocado Miso Dressing

  • 1 avocado, seeded and scooped
  • 2 tbsp. miso paste
  • 2 tbsp. apple cider vinegar
  • 1” chunk fresh ginger
  • dash of rep pepper flakes (optional)
  • 2 tbsp. nutritional yeast
  • ½ cup water as needed

Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy! Makes 4 servings.

And yum, the texture can be as thick and creamy as you want. I like it very thick because it’s avocado!

Miso paste adds tangy umami with a hint of lively heat perfect for coating while not overpowering.

This versatile dressing goes with just about any salad ingredients, even the chopped apple I added to this one.

    Miso Dressing sounds great right about now! I can’t remember the last time I had Miso Paste in my frig! I need to get some! Thanks for the reminder! The colorful meal sounds terrific, too!

    This dressing looks fabulous like all your dressings! I do the same thing, stock up on avodacos when they are on sale. Can’t even imagine going outside all that much, we were hit with yet another huge blizzard this week, school cancelled 2 days in a row because the buses couldn’t get down the side streets! Oh well, there’s always salad and March madness. hehe.
