Things are still crazy at work and hot here, 108 degrees the next 2 days. The poor animals are getting a little restless locked in the air conditioning all day, Smokey has been couch stalking hubby for more attention.
And Miko is always nearby waiting for anything exciting to happen.
Leela is has been stalking me begging for her new treat obsession – Dang Caramel Sea Salt Coconut chips.
I picked up a few a lot of bags from Grocery Outlet for an unbeatable price and Leela loves them! I love them because coconut is good for dogs and they’re a cheaper and healthier vegan alternative to processed dog treats.
I am loving chilled salads in this heat, lots and lots of chilled salads tossed with beans. And this unique dressing recipe can be whipped up with your favorite flavor of hummus and is a fun and tangy way to get more raw garlic.
Lemon Hummus Dressing
- juice of 1 lemon
- 1 clove of garlic
- ¼ cup hummus
- salt and pepper taste
- ¼ cup water, as needed
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy! Makes 2-4 servings.
Mmmm, this salad was packed with great northern beans, greens, and cabbage for a hearty meal.
The dressing is lighter, not very thick and great for delicately coating with a kicky flare.
