I think these two are as ready for the long weekend as I am!
The weather is supposed to be warm and perfect for sandals, long walks, hikes, and play time! And hopefully play time in the kitchen. For now I have another simple dressing recipe I created for a comforting and hearty kale salad after a crazy day. It’s adapted from traditional tahini garlic sauce with more herb flare and loser texture to make a great dressing. It’s rich, thick, creamy, tangy, and has a lively garlic kick.
Simple Tahini Dressing
- ¼ cup tahini
- ¼ cup water, as needed
- 1 clove raw garlic
- 2 tbsp. lemon juice
- 2 tbsp. nutritional yeast
- 1 tsp. dried parsley
- 1 tsp. dried cilantro
- ½ tsp. smoked paprika
- 1 tbsp. tamari
Place all ingredients into a high speed blender and blend to a creamy texture. Serve and enjoy! Makes 2 to 4 servings.
Isn’t the kale lovely? It’s fresh from our garden and I had to share many pieces with Miko. I also sauteed more leftover homemade seitan cubes with Cajun seasoning to toss in for a hearty meal salad.
The creamy texture coated all the veggies nicely for an easy, comforting dinner.
I topped with vegan bacon bits for a little crunchy, colorful pop.
The tangy and rich flavor of this dressing will go well with any variety of greens, but it worked especially well with the slight bitterness in kale.
We also had a sweet dinner guest join us in her favorite chair.

I’m right there with you- I can’t wait for the weekend! My family is in town for my graduation ceremony tomorrow, but I’ve been working so much that I’ve barely seen them!
