TGIF! Especially for me since I’m taking today off for a 4 day weekend and having a relaxing morning at home drinking coffee and enjoying the foggy, drizzly weather.
I actually like this weather, it’s peaceful, pretty, and a great excuse to park it in front of the fireplace like Miko.
Or in front of a space heater at my desk this morning. :-) I’m looking forward to a few down days to relax and make progress on sorting through stuff I don’t need for the new year.
And still on a roll with dressings this week trying to create more creative veggie-based ones with a lot of flavor. This one is raw broccoli based and still creamy and tangy thanks to tahini and lemon juice. And has a cheesy flavor and texture. Why not season veggies with more veggies?
Cheesy Broccoli Dressing
- 1/2 cup of chopped broccoli
- 1/4 cup of tahini
- 2 tbsp. lemon juice
- 1 tbsp. tamari (or soy sauce)
- 1 clove of garlic
- 2 tbsp. of nutritional yeast
- 1/2 cup water, as needed
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy! Makes 2-4 servings.
This recipe is a great way to utilize broccoli stalk which is actually very tasty and one of my favorite parts of broccoli.
The texture is creamy and cheesy looking.
Perfect for coating a salad.
The flavor is tangy and cheesy with a hint of garlic bite and worked great with this romaine salad.

What an amazing dressing! The stalk of the broccoli is probably also my favorite part, but I’ve never thought of using it as a salad dressing. Such a great idea, I have to try it out!
