I’m getting too old for daylight savings I think and looking forward to ending this madness after a long week. At least it was full of good eats. There was a simple kale salad with chickpeas, apples, and a creamy garlic tahini dressing. Also fried rice with veggies for a lazy dinner.
I got a little creative simmering brown rice, chickpeas, and veggies in Pacific Foods Organic Cumin Carrot soup for a dish that came out tasty with a little kick.
The Roasted Sweet Potato Black Bean Tacos from Zest Kitchen helped to liven up a Wednesday lunch.
And another simple dish using batch cooked chickpeas and brown rice with broccoli simmered in marinara sauce for satisfying comfort food.
The Korean Noodles with Tofu from Pho Vegan Asian Cuisine was a great way to celebrate Friday for lunch.
And another simple chickpea dish simmered with sweet potato and broccoli in a creamy turmeric sauce made a hearty dinner. But the kicky Thai tofu takeout in coconut curry sauce added needed flare.
I tried a new pasta find, Veggiecraft Zucchini Penne and it was good served with marinara sauce made creamy with a drizzle of Miyoko’s Liquid Vegan Mozz which I highly recommend. The texture of the pasta is good, it’s firm with a slight earthier texture, but good flavor.
And I made simple fried rice with crumbled tofu, turmeric, and veggies for a one-pot meal with leftovers for the week. I hope you have a great week ahead and recover from losing an hour if you did. And the list is a positive start!

I love having more light in the evening, but the transition sure is rough. I’m still so scrambled; I can’t believe it’s almost 7 and still super bright out now!
