It’s been a long week and a short weekend, sigh. But it’s been a good week of eats, I have been cleaning out the freezer a bit using up forgotten Grocery Outlet finds like these Hungry Planet Grilled Strips chopped into a spinach salad with carrot miso dressing.
It was really good in a salad, good texture with a savory and kicky flavor, would buy again.
There has also been more simple noodle and soy curl soups with veggies, cold and rainy weather comfort food.
And using up Like Meat Like Chick’n Patties chopped into a broccoli sauté with a kicky garlic tahini sauce.
Also a turmeric sweet potato and soy curl sauté for a simple and filling one-pot meal.
And more vegan wonton soup from Pho Vegan Asian Cuisine because it is such a cold weather comfort food.
Friday Ron sweetly picked up a lovely veggie pizza with vegan cheese from Papa Murphy’s with plenty of olives and artichoke hearts on my side.
Two slices were huge and filling, so easy leftovers for lunch tomorrow!
There has also been lots of brown rice dishes since I have been batch cooking it for simple meals.
And vegan sandwiches from Mendocino Farms, Ron got the Vegan Bahn Mi and I got the Philly Shroomsteak which was very good for someone who is picky about mushroom texture, it was very “meaty” with vegan cheddar and kicky peppers.
Back to work tomorrow after a cold and rainy weekend, hope everyone has a great week ahead and finds good news in the list.

Mendocino Farms is so good, I miss it terribly. Their Impossible taco salad is killer, but I could never leave without getting the curried pasta. I wish they would franchise out here!
