I hope everyone is having a good weekend. We’re getting good weather here, sunny and in the 60s. Or “fake spring” as we call it since the cold weather and rain is back in the forecast. But it was good for getting yardwork done and having dinner on the patio. It’s been an interesting week of eats that included a lot of chickpeas and brown rice since I batch cooked a lot for the week.
Chickpea spinach salad with tangy tahini dressing.
Stir fried brown rice with broccoli and soy curls. And chickpea, potato, and broccoli sauté in marinara sauce.
More fried brown rice with broccoli and corn.
And Kung Pao Tofu from Pho Vegan Asian Cuisine for lunch one day and kicky vegan Thai takeout for dinner another night.
Saturday we had vegan burgers from Burger Lounge enjoying the nice weather on their patio, I am a fan of the Ancient Grains veggie burger with vegan cheese.
More rice and chickpeas in a simple creamy spinach sauté mixed with vegan sour cream and seasonings. And more chickpeas and potato in marinara sauce leftovers.
Tonight we had the last of our stash of The Very Good Butchers Plant-Based Ribs from our freezer. It was a little sad since this product was discontinued, so we loaded up our freezer from Grocery Outlet because they are so good.
Served with extra garlicy roasted sweet potatoes for a filling meal. I will miss these and hope plant-based ribs like these will return to market soon! And I hope you have a great week ahead starting with the list.

It really is crazy that there aren’t more options for vegan ribs, and barbecue in general, and ESPECIALLY here in Texas. There’s clear demand, and those look fantastic- What’s going on?!
