Whew, what a week and a Super Bowl. I meant to post last weekend, but we lost power for nearly a day in the storms and had a candle light dinner of Daiya Mac & Cheese from the pantry since we could not open the fridge.
That made an interesting start to the week of a lot of eating out due to no power or having to purge items in the fridge after, ugh. There was a great vegan pizza from Mod Pizza with coworkers one day and a huge spinach dinner salad for dinner.
And The Rachel salad from Amy’s Drive Thru another day which is very sad looking at that now because it was the last thing I ordered from that location before it was abruptly closed Friday with no warning! By the time I saw the post from Amy’s on Instagram announcing the closing of two locations, it was already closed and me in shock. It always seemed crowded and popular to me and everyone working there was so nice, I am heartbroken and not sure what to think of the situation that just seems cruel. Ugh! No more Friday lunch dates there.
Other eats was a simple tofu and stir-fried rice dish and a fun Just Egg brunch on the day of the storm to enjoy not leaving the house.
We also tried a new Thai restaurant with a lot of vegan options, the tofu rolls, yellow curry, and tofu basil dishes were delicious, colorful, and loaded with veggies.
And there were multiple trips to Zest Kitchen for the Veggie Quesadilla and Autumn Harvest bowl with more simple tofu stir fries at home since I was not feeling very creative in the kitchen this week.
And when I did try to get creative with this creamy dill and spinach quinoa dish, it was just eh and needs some work. But I will perfect it.
The was also a simple potato and chickpea turmeric sauté and spinach salad with more chickpeas. And I enjoyed my new favorite vegan fish find from Grocery Outlet, Omni Foods Plant-Based Fish-Style Fillets with simple sautéed cauliflower.
Also a creamy marina penne dish with spinach and peas and another simple tofu stir fry.
It’s been an interesting two weeks and I am optimistic this week will be better, right? Hopefully a great week ahead for everyone starting with the list.

Being vegan, I just love seeing all the vegan meals you share. That Thai food looks really good. Sorry that you lost power, but seems that you managed well.

WHAT? Amy’s is closing?? This is crushing. I can’t believe it. How, why? I’m genuinely upset. Glad it’s not all locations, but still…
And so sorry you lost power! That’s awful too. So much bad news at once. :(

It is crushing, especially with no warning! It seemed to popular when we were there and staff was so nice. I wish they would have put more effort into making the location work. Thanks on the power, thankfully major food loses were prevented.
