Ugh, this weekend flew by too fast. I am still in long weekend/holiday furlough mode. For a 4 day work week, it felt longer with busy days. There have been simple comfort eats like this tempeh and potato turmeric sauté with corn and kale.
We got a bit of sunshine today before the rain came back, so I got our for a walk to enjoy the fresh air and full ponds. And enjoy a fantastic vegan lasagna made by Ron for dinner with simple sautéed veggies.
I also stepped out to Zest Kitchen for lunch one day for the Autumn Harvest Bowl while it’s still available.
And kept it simple with a tamari tofu stir fry with cabbage and water chestnuts for a lazy dinner. Also made a simple veggie soup with elbow macaroni that made great leftovers for multiple lunches.
And a huge spinach salad with shredded carrots and nacho cheezy hemp sauce for a dressing.
There was more leftover elbow macaroni stew and Ron made a fun tater tot topped vegan shepherd’s pie with plenty of gravy he enjoyed for multiple meals.
I also stepped out for lunch with coworkers to TBar Tea Bar & Fusion Cafe. This place is a good choice for a group to go with many dietary preferences because you can customize your own bowl or wrap, and they have ginger tofu of Impossible meatballs for vegan protein options. I made a pretty bowl with ginger tofu, quinoa rice blend, and wasabi ginger dressing for a filling lunch.
There was also a filling kale salad using up the batch of nacho cheezy hemp dressing I made and a lunch at Amy’s Drive Thru for Vegan Broccoli Mac.
And now I am trying to motivate myself for the work week ahead, it will be a good week – right? I hope it’s a great week for everyone starting with the list.
