Fun Eats for the List

I am thankful for another long weekend, I feel like I need it after a busy week at work. Having good and fun eats help get through a crazy week like these Omni Classic Fillet Plant-based Fish-Style Fillets I found at Grocery Outlet.

I served them proper with fresh lemon and sautéed potatoes and broccoli. The texture and flavor was very close and delicious, there was nothing off or iffy about these. If we had room in the freezer, I’d go back and buy the rest of these!

Vegan Circus Food Truck was in the neighborhood again this week, so I stopped by for dinner on the way home from work one night for the Circus Nachos for me and Big Top Burger for Ron. The nachos are a treat with house made green queen and nacho cheese sauce.

There was also The Rachel salad from Amy’s Drive Thru and vegan Thai dishes.

I did throw in some healthier dishes too such as simple soy curl spinach salad with creamy dill dressing and kicky turmeric soy curl and broccoli stir fry.

There was also another Grocery Outlet find that made a great busy night dinner, Sweet Earth Veggie Lovers vegan pizza loaded with a nice variety of veggies including Brussels sprouts. It was tasty with red pepper flakes, good crust thickness and texture and nicely crunchy.

And more salad, trying to mix in more healthy options. I made a fun nacho creamy hemp dressing for one with plenty of leftovers for work lunches.

It’s been a good weekend so far for a rainy and overcast one, good time to catch up on house projects and enjoy the fireplace. I hope everyone has a great week starting with the list!

    We have food trucks in a local park every Tuesday, but never seen a vegan one. I wish we had one.. I like the Sweet Earth products.

      Hopefully you’ll get a vegan one soon or one with vegan options. Yes, I’ve liked all Sweet Earth products we’ve tried.
