It’s been a fun and productive weekend starting with seeing John Mulaney on Friday night at Thunder Valley Casino. Because we did not have a lot of time to plan for dinner before the show after work, we decided to grab dinner at the casino which was the an Impossible Burger with Daiya cheese from Fat Burger. Not the healthiest dinner, but tasty and more like a traditional diner burger.
The show was great, but a little trippy because they were strict about not allowing phones or devices and had everyone place their phones in a locked bag to keep it with us, but not be able to use it during the show. We were going through phone withdraw while waiting for the show to start, lol.
I did try to eat healthier the rest of the week with the Super Salad from Amy’s Drive Thru, Yishi vegan Mango & Cream Oatmeal I found at Grocery Outlet, and Imagine Butternut Squash Soup.
I also tried Good & Gather Yellow Lentil Penne with marinara sauce, spinach, and vegan parmesan for a simple and filling dinner.
The texture of the Penne was firm and chewier which I liked, it made it more h earty.
And had a lazy Gardein Chick’n Teriyaki Bowl for lunch at work one day. It was good with nice flavors, but not very hearty making a lighter meal.
There was also simple soy curl and veggie turmeric soup, my winter comfort go to, and I re-mixed Thai tofu leftovers by sautéing with chopped cabbage.
And now I’d sad the weekend is ending and hoping for a good week next week for everyone starting with the list.

Dang, locking up phones for any event would be a HARD sell for me. A good thing to do, no doubt, for staying the moment and really focusing on the entertainment, though. Everything in balance, just like your week of fabulous eats!
