Now Christmas is only one week away, wow. I am struggling a bit this year to really get into the spirit, but trying and looking forward to some time off for the holidays to decompress and get stuff done. And looking forward to spending time with family.
I have been trying to eat healthy between holiday splurging with lots of salad using Trader Joe’s broccoli slaw and Creamy Vegan Dill dressing.
And simple sauté’s such as tofu, veggies and brown rice, turmeric potatoes and chickpeas, and a simple chickpea and kale soup with elbow macaroni.
And splurging includes stepping out for kicky vegan Thai dishes at a local Thai restaurant, peanuts and kicky curry coconut sauce is such a great combo.
We also stepped out to try Salt & Straw, craft made curious ice cream. They have 4 vegan flavors that are more than sherbet, I got Chocolate Sugar Cookie Dough and Ron got Peanut Butter Brittle Caramel Fudge which were both great, but the peanut butter was a decadent experience we’ll be going back for.
I also tried something new for dinner, Meati Crispy Cutlets. I cooked them in our air fryer and served with sautéed cauliflower.
The texture and flavor were great, nicely crispy outside with a hearty, “meaty” texture and flavor that is not trying to be exactly like meat which I like, but have a satisfying texture and flavor that us unique and delicious.
Back to the grind tomorrow, hopefully a productive week before taking time off and a great week for everyone starting with the list.

Oh I love Meati, but I’ve actually not tried their chicken! The steak is honestly scary realistic, almost TOO meaty. I never really ate meat before going vegan, and certainly not steaks, so it’s a rare treat kinda thing.

Me too and looking forward to trying more Meati products, Ron is a huge fan of the steaks.

Everything looks so good. I’m eyeing the spinach dish or is it kale. I have not seen meati here.. I’ll have to look for it. Have a wonderful Christmas.
