Soups and Bowls for the List

Fall is officially here and it even feels like it a bit with cooler temps and a breeze this weekend. It has been a chaotic week for me being busy at work and with life, so there has been some convenience eats. Ron sweetly got Thai takeout Monday night.

I went to Zest Kitchen again for the Vegan Poke Bowl because it’s so delicious and easy for work lunches. And I am still having fun with the Squiggly Knife Cut Style Noodles from Trader Joe’s adding them to veggie and chickpea soups.

And I tried Upton’s Minestone Soup for an easy lunch, for being lower calorie, it is packed with satisfying beans, veggies and pasta.

I also ran by Whole Foods for a quick lunch one day this week which I have not done in ages and opted for vegan options from the hot bar which included lemon rice, potato samosas, and steamed veggies. It was good, but not too exciting and I think I will stick to Zest Kitchen.

Friday we had a splurge dinner, Ron sweetly picked up vegan pizza from Papa Murphy’s and a decadent dessert, Jolly Llama vegan ice cream cones.

And today we stepped out to lunch at Green Grill where the Veggie(kofta) Tikka Masala Bowl was just the right amount of satisfying while being very flavorful and colorful.

And there were more simple chickpea dishes since I batch cooked a bunch for the week including a massaged kale salad with vegan dill dressing and a kicky chickpea and ginger stir fry.

Another weekend flew by, wow. I am hoping for a good week next week and hoping everyone has a good week too starting with the list.

    What I would give for just a touch of that cooler weather! Still 100+ degrees here, but it is what it is. I’ve gotten used to it, at least… “Soup season” means gazpacho now; it could be worse. :)

    We have had RAIN and cooler weather all week but had to enjoy it in the continuous rain. Now I heard it’s going to be back into the 80’s this coming week. I’m looking forward to fall!!

      Me too, in the 70s this weekend, but back to 90s next weekend for a few days and ready for fall.
