I’m not sure I’m ready for summer to be over, a rare thing for me to say. But this has not been a brutally hot summer and I’d like more outdoor adventures. I did get to break out my neglected inflatable paddle board this weekend for a paddle boarding excursion with my sister and had a great time. We’re thinking of getting out again next weekend while we can.
After we went to Sunflower Drive In for vegan tacos and refried bean dip while enjoying outdoor dinning.
Then got out to our favorite local Thai restaurant for vegan tofu dishes and beer for dinner, not a bad day!
We also ventured to Whole Foods and found these – Wunder Eggs!
Truthfully this was not exactly a product I was looking for, but since it exists now we had to try it. For a short ingredient list, these were delicious with a little black salt (included) sprinkled on top and would make a great “egg” salad sandwich or just enjoy for snacking or as a salad topper. Not cheap, so an occasional splurge. But we will get these again.
There has also been loaded salads this week and simple tofu stir fries.
And the delicious vegan Poke Bowl from Zest Kitchen for lunch one day, glad that seasonal dish is back on the menu!
Today I stepped out to Mikuni’s for lunch with my mom and sisters and got the lunch special of two veggie rolls. It was delicious and just the right amount of food not being too filling.
I also make a huge meal salad using cucumber and tomato from our garden with hemp seeds, sprouts, and a delicious carrot, miso, ginger, and tahini dressing whipped up in the blender. And a simple turmeric, chickpea, and potato one-pot meal sauté that provided easy leftovers for the week.
Sad the weekend is over, but we get a long holiday weekend next week and hopefully a good week before for everyone starting with this list.

Agreed, but we have been lucky this year so far with less heat. That’s awesome on Wunder Eggs, they were such a fun treat.

I figure summer is through the end of September so I have another month. You found so many great vegan dishes at the restaurants. I think on the East coast we don’t often have as many vegan choices.
