Still raining this weekend and making it tough to find motivation to leave the house. We need it, sure, but I could use a dry sunny weekend! We’re appreciating this view too though.
I have been trying to counter the gray days with colorful eats such as veggie fried rice, turmeric noodle soups with soy curls, and more veggie fried rive with tamari because I batch cooked a large amount of rice for the week.
And more simple veggie rice dishes, haha.
But there was also this Performance Kitchen Vegan So Cal Kale & Bean frozen meal at work one day.
It was good, filling enough for a work lunch. But not very hearty.
There was also stepping out for spicy vegan Thai dishes on Friday.
And a delicious Blackbird Vegan Margherita Pizza last night.
It was nicely satisfying while not being too heavy, the crust texture and thickness made for a heartier pizza and worked well with smoky pepper flakes.
Tonight was more turmeric noodle soup, I know. But it was using a new product Ron found at Grocery Outlet that screamed me – Nature’s Greatest Foods Organic Turmeric Noodles. They’re vegan, gluten free rice noodles with turmeric for a warming color and flavor. I simmered with in a hearty and warming soy curl soup and found they held up well for soup not getting too mush or dissolving.
And back at Sunday, where did the weekend go? Well, it was an hour shorter – when will we be rid of this? Hopefully I won’t be feeling this all week and you have a good week starting with the list.

Yes, they were a fun treat and turmeric is so great to add to soups, smoothies, and salad dressings. Not yet on the rain, haha. But that’s okay, we need it.

Those noodles are gorgeous! Not sure if I can get them here, but it makes me want to try cooking regular rice noodles in turmeric-infused water for a similar effect.
