This was the first sunny weekend we’ve had in awhile and we celebrated by getting out to the trails and getting caught up with much needed yard work.
And a trip to Trader Joe’s for new vegan finds such as this delicious Spicy Lentil Wrap with Spicy Tahini Sauce. It was a quick find for a satisfying grab and go lunch for under $5 with a nice kick.
Of course more turmeric soy curl noodle soup, a comfort go to in cold and wet weather.
Also more simple rice and veggie stir fries using up leftover seitan corned “beef” from last week which also worked well chopped to add protein to a salad.
I also added sweet BBQ soy curls to a spinach salad with vegan cilantro lime dressing for a tasty meal. And had simple veggie loaded vegan pizza for another night.
For eating out this week I got a great spicy tofu dish at a noodle restaurant near work, tried another great tofu dish at a Vietnamese restaurant near work, and Pad Thai from Pho Vegan Asian Cuisine.
Tonight we made it a burger night trying grilled Wild Harvest Plant Based Burger Patties with Trader Joe’s Vegan Cheddar Slices.
The burger patties are good, hearty with a good flavor and texture. Their not Impossible Burgers, but I like that they are not greasy and did not have anything off with the flavor.
Ugh, back at Sunday before a busy week. Time to start planning a vacation soon! But looking forward to a productive week and I hope this list is a positive start for you.

I swear, there are so many plant based burgers out there now, you cold easily try a different one every day of the week and still never run out of options! I’m certainly not complaining, just marveling. Haven’t seen these but at least they don’t sound earthshaking one way or another.

So true, I find more new ones on each shopping trip. Found kelp vegan burgers on the last shopping trip to GO, have not brought myself to try those yet!

I really want to try that cashew cheese! Glad you are getting a sunny day! Not too many here. Sometime I don’t might the cold as much as I mind the lack of sun. It’s dreary!

It’s really good with a cheese-like texture perfect for crackers too. Yes, the rain has cleared up here, looks like we get spring next week with warmer temps.
