Winter Madness for the List

The weather has been a little crazy in California again, strong winds, colder than usual temps, snow flurries, hail, and lots of rain. Not complaining and taking the opportunity to rest at home while we’re getting rid of this bug and work on house projects. And enjoy the scenery when mother nature takes a break.

This week has been about simple comfort foods, more soy curl turmeric noodle soup, salads with batch cooked chickpeas, and a fun dinner at my sister’s house of Tofurky Sausage, grilled asparagus, and delicious sautéed peppers over rice.

We are still enjoying batch cooking rice and chickpeas to use in simple dishes during the week like this creamy curry dish.

And I discovered Miyoko’s Liquid Vegan Mozz makes great creamy sweet potato and veggie sauté.

I stepped out with coworkers for lunch at a local noodle restaurant I have not tried yet and got a kicky, delicious tofu veggie dish happily covered in chili peppers. Looking forward to going back soon!

Again, more simple soy curl noodle soups, my comfort favorite currently between colds and cold weather.

I found a fun freezer item to try at Grocery Outlet, Cadence Kitchen Vegan Latin Bowl. A simple blend to pour into a skillet, then enjoy. I added chopped pepper, shredded Daiya Cheddar, and cilantro for a good meal.

It had a daring amount of spice, which I was fine with, but rare for frozen meals. It was flavorful and hearty for a fast meal option.

Back to the work week tomorrow and wow, almost March! Let’s start the week with some positivity in the list.
