Things are still chaotic here with the winter storms California is getting pounded with the last few weeks. I’m not complaining and thankful for the much needed rain for the state. Maybe getting a little tired of staying in on the weekends and ready to get out for some sunshine. And a little sad to see so many downed trees in the area like one of my favorites from a local trail below.
But it looks like we get a break next week thankfully. We had a crazy red cell storm Saturday morning that caught us by surprise, I have never seen that much rain come down at once! And somehow every window on our house sounded like it was getting violently hammered with rain and hail at once while a train was going over the house. It was madness that thankfully did not last long because it left our backyard flooded nearly up to the house while the drains caught up.
This week I have been trying to focus on simpler, whole eats and utilizing leftovers for work lunches to avoid driving more than I needed to in this weather. I found a bag of heirloom beans during a pantry cleanout I bought awhile back and forgot about. I pressure cooked them for a large batch of beans and rice for multiple meals. As well as large pasta and salads for easy leftovers.
There has also been takeout from Pho Vegan Asian Cuisine, quick lunch at Zest Kitchen, and Friday night rainy pizza night with Clo-Clo Vegan Pizzas.
I made a huge batch of lentil noodle and veggie soup with turmeric for leftovers and a comfort rainy weather treat.
There has also been air-fried Brussels sprouts nuggets we found cheap at Grocery Outlet with dipping sauce and a savory soy curl stir fry with onions, garlic, and tamari.
Ron was excited to see the Sprouts Farmers Market now carries the Beyond Steak Plant-Based Seared Tips and grabbed the ingredients to make a vegan mushroom steak melt sandwich was looked delicious.
And I am enjoying a long, rainy holiday weekend to relax before heading back to work tomorrow. Possibly the last rainy weekend for a bit and we’ll be able to do some garden clean up next weekend and prepare for spring. I hope you’re having a weekend and enjoy inspiration found in the list.

Such a strange time to visit; I was there for the hail! I’ve never experienced anything like that when I was living there. It’s a relief that things should normalize a bit soon, this weather is just crazy.

My goodness, yes! Crazy hail multiple times so we are enjoying a break from it this week!
